Easy At-Home Sugar-free Chocolate Recipe
Here at Get Fit Korea, we champion the effects of shifting to a sugar-free diet. But, how do you make sugar-free chocolate in Korea? It’s actually not too hard. All it takes is two ingredients, both of which can be found here in South Korea.
WHAT YOU’LL NEED:
- 1/2 cup of pure cocoa chips.
- 1 tsp of liquid stevia
Finding the pure cocoa chips can be a bit of a challenge if you’re shopping in your local Korean mart. Even mega chains like E-mart and Home Plus likely don’t carry it. To find pure cocoa chips (called 코코아 매스 in Korean), you’ll need to find a local baking store (we found a great one called SamWon in Daegu) or go online and shop around. A 1 kg bag will run you about 18,000 KRW, which may seem expensive, but since you’re using just 1/2 a cup (or about 60 g) per batch, you’ll see that bag last you a long time.
Liquid stevia may be a bit harder to come by. Some mega chains are starting to carry powdered stevia, but you’ll want the liquid form for this recipe. It will blend much better. We recommend picking up a bottle through Iherb on your next order. For this recipe we are using NOW Foods Better Stevia Dark Chocolate flavor. We’ve used the French Vanilla too and both are very tasty.
First, measure out 1/2 cup (60 grams) of chips and place in a small, durable plastic bowl. Bring a larger pot of water to a soft boil. Then, carefully lower the bowl of chips into the water and allow the water to slowly melt the chips. Stir the chips on occasion to help melt. The melting should take only about 3-4 minutes.
Once the chocolate has smoothly melted, remove from heat (we use tongs because that plastic bowl is hot!) and immediately add in liquid stevia. Stir in thoroughly.
If making brick chocolate, we like to smooth out the warm chocolate onto a plastic plate and set in the refrigerator for about 30 minutes to harden. Break off a piece and enjoy or mix into a healthy chocolate chip cookie recipe! We also like to add this is a bag of mixed nuts for an on-the-go snack.
Keep uneaten chocolate in the fridge until fully consumed.
